Food writer and kitchen designer Deborah Krasner has written a general book about olive oil. The book is touted as a tasting guide and cookbook. If you are a professional looking for extensive tasting reviews, this book may disappoint. It is more geared to the uninitiated with an interest in learning more about olive oil. It is a 218 page book. The first 18 pages cover olive oil basics. The next two chapters (26 pages) cover tasting olive oil and provide tasting notes. Krasner devotes one to two pages to most countries and 9 pages to Italy so Italian olive oils receive the most attention. This leads to a chapter on olive oil cuisine and the kind of equipment and supplies you will need. The bulk of the book (145 pages) covers recipes. I am a beer judge and I am interested in the sensory evaluation of food. I picked the book up for the tasting guide and for that purpose it fell a little flat. Some of the recipes looked good so I picked it up anyway.

This is an excellent book. It includes an extremely lucid discussion of what extra virgin olive oil is and how it is produced. The descriptions of almost 150 oils from around the world are extremely useful, especially since it includes oils commonly found in most supermarkets in addition to specialty oils (lots of web addresses are included). The discussion on how to classify and taste olive oil is probably the best I have ever read. Almost 2/3 of the book is devoted to wonderful recipes based on olive oil. I have not even finished reading it yet and I have already marked favorites and just took the first batch of olive and pepper knots (an easy cocktail treat) out of the oven. Finally, the book is filled with practical advice and hints on cooking, cookware, and just eating well. This book is definitely worth the purchase for anyone who wants to learn more about olive oil or to explore Mediterranean cooking.

Once you develop a palate for different oils and have a favorite type or types of olive oil, this book is extremely helpful in guiding you towards the types of purchases you would most enjoy. In the past, I bought many bottles of olive oil which were good, but were not of my preferred types, so I ended up feeling as if I had wasted my money. This book has been a very helpful guide to me. On my wishlist would be a revised and expanded edition!

Every recipe I've tried from this book has become a new favorite. The flavor combinations all have at least a slightly new twist. The general information and narrative is entertaining and informative. This book is a little treasure.

Krasner's explanations and recommendations for specific types of oils for specific uses are excellent. I have also used several of the recipes in the book with great success. I especially like her flash-roasted salmon with Saba recipe.
