Reviews about Cook's Illustrated 2003 Annual (7):
After discovering the Cook's Illustrated magazine, I was so impressed with how much information was targeted at the 'average' cook, and was impressed with how the recipes included test results on what did not work and what did. The focus on basic cooking skills and not about fancy cooking recipes using oddball and hard to find ingredients is what won me over. Honest reviews on cooking utensils and recipe items such as sauce and condiment taste for example have not let me down. A collection of these annual issue books has allowed me to liquidate many many cookbooks I owned that did not make the grade. These are the definition of what the foodie needs for honest info and decent results when attempting the recipes within. Highly recommended for novice to skilled, all will pick up knowledge from this.
I have twenty years' worth of these hardbound annuals, but I was mildly disappointed in this one because of the lack of fish. I'm not talking about shellfish - there's always a shrimp dish or two to be found. In previous annuals, there seemed to be an emphasis on salmon, as if other fish didn't exist, but then my hopes were raised by recent annuals that had creatures like halibut. In the 2003 annual (which is otherwise as excellent in food science, kitchen tips, fascinating essays and reliable recipes as all the rest), it simply stands out that there are some recipes for tuna steaks and that's about it. Naturally, the reviews of equipment are out of date but I still consider them worth reading to learn about the ins and outs of such gadgets. The reviews of cookbooks may be for books no longer in print, but if you're intrigued they should be available on the secondary market. Letters to the editor, quick tips, editorials and the like are fun to read. My favorite aspect - and this is why I've been collecting these annuals for decades - is the preliminary explanation of The Hunt for The Best Recipe: what they looked for, how they went down the wrong path in search of it, and how they succeeded. Even if you don't cook, it's an enjoyable read. But where did those fish go?
We needed the 2003 annual edition to fill out our collection. At first we bought the magazine but later realized the annual editions were the way to go. The bad thing is waiting until the end of the year. Inside Cook's Illustrated you will find more than just the best recipes, you will also find honest product reviews (no advertisers to bias the judges) and tips and tools of the trade.
I can't speak from personal experience. I bought the last 10 years for my dad as a christmas gift and he loves these books. He uses them all the time in the kitchen for refrences. He said he is going to wait for the annuals rather than subscribing to publisher.
Love all these Cooks Illustrated cookbooks.
Love these Annuals. Ordered 5 used from Jensen and was so pleased at the quality I received.
I am very satisfied.
2003 was a great year for Cook's Illustrated. There are many recipes I make for special occassions - they are not very healthy, so I don't do them often, but they recieve rave reviews. Roast Lemon Chicken (Jan/Feb), German Apple Pancake (Jan/Feb), Carrot Cake with Cream Cheese Frosting (March/Apr), Scalloped Potatoes (March/Apr), Lemon Cheesecake (May/Jun), Pumpkin Cheesecake (Nov/Dec), Green Beans with Orange Essence and Toasted Maple Pecanse (Nov/Dec). I never liked scalloped potatoes until I used the Cook's Illustrated recipe.
